The best way to eat your veggies… is to douse them with hearty bolognese sauce, gooey cheese, and pepperoni. I’m talking epic zucchini bolognese pizza boats.
No joke, this dish tastes like a big hug from your grandma. It can also be made ahead and baked 40 minutes before you’re ready to eat! I usually make everything from scratch, but I took a little shortcut and used canned tomato sauce instead of making my own. Results were still fantastic!

Step 1: half the zucchinis.
Step 2: scoop out the seeds.
Step 3: stuff with meaty bolognese tomato sauce.
Step 4: add cheese and and pepperoni and bake till ooey gooey perfection!
