The best way to eat more veggies is definitely to play with your food 😉 These are great make-ahead little pick-me-ups for breakfast or honestly ever any time.You can use different veggies to taste – I just used the veggies that can all be chopped into similar shapes for consistency. Radishes, tomatoes, cucumbers, and onions are a really great flavor combination, but that’s just 1 option! You can get fancy and add grilled veggies (like zucchini, carrots, onions), pesto, romesco sauce, tomato sauce, etc. You can also go the sweet route and sweeten the cream cheese, mix it with Nutella or peanut butter, and add strawberries or banana.

Up close and personal- an ode to cream cheese
When it comes to cream cheese, I’m such a fan (aka groupie). When I first moved to America when I was 7, I remember my whole family eating cream cheese by the spoon. We didn’t have cream cheese back then, so it was like we had discovered fire. No shame in my cream cheese game.
Then, as I got older I got a little more sophisticated with my cream cheese. I started adding sundried tomatoes, PESTO, walnuts, jalapenos, chives, dill, and the list continues. Plain cream cheese is good, but I’m all for bedazzling it for extra flavor. You can make it sweet, you can make it savory, and everything in between.
If you’re really going for the gold, my #1 recommendation would be to add some smoked salmon and scrambled eggs, alongside all of your veggies. That would be like all of my favorite things in 1 place. What a time to be alive it would be.
