NAUGHTY Super Bowl- Jalapeño Totchos w/ Monterey Jack, Avocado, Fried Egg, and Toby’s Jalapeño Ranch
Jalapeño Tater Tots (Makes ~2 dozen):
~1 pound small russet potatoes (about 2)
2 tablespoons fresh finely minced parsley
2 tablespoons fresh finely minced cilantro
1 tablespoon finely minced jalapeno
1/2 teaspoon pepper
Canola oil, for frying
1/2 cup shredded Monterey jack cheese
1 large egg, fried
1/2 medium avocado, thinly sliced
1/2 small serrano or jalapeño, thinly sliced
2 tablespoons Toby’s Jalapeno Ranch dressing
Cilantro, for garnish
1- Peel the potatoes and place in a large pot of cold water, fully covering the potatoes by at least 1 inch. Turn the heat on high and bring water to a boil. Then, close the lid and let boil for 5 minutes. Drain potatoes and let come to room temperature, about 30 minutes.
2- Meanwhile, shred cheese, chop jalapeños, chop herbs, and cut avocado.
3- After the potatoes have cooled, grate potatoes with a box grater into a large bowl. Drain out as much water as possible. Mix in fresh parsley, cilantro, jalapeño, and black pepper.
4- Add about 1- 1 1/2 inches of canola oil to a small saucepan, heat on high. Preheat oven to 400 degrees. While the oil heats up, form small tots, using a measuring spoon for even-sized tots.
5- Fry tots in batches of 6-8, depending on the size of your saucepan until golden brown- about 3-4 minutes. Remove, and drain excess oil with a paper towel. Sprinkle sea salt right after frying. Repeat with the rest of the tots.
6- Transfer tots to a skillet, add cheese, and bake in a preheated oven for 3-4 minutes, until cheese has melted.
7- While the cheese melts, heat up small amount of oil in a small skillet to fry the egg, sunny-side up.
8- Assemble the totchos! Add fried egg, avocado, fresh jalapeño or serrano chili, fresh cilantro, and a generous dollop of Toby’s Jalapeño Ranch dressing! GAME ON!
Ready for the healthy version?
NICE Super Bowl- Broccoli Tater Tots w/ Toby’s Ranch
12 oz broccoli florets (makes 2.5 cups grated broccoli)
2 large eggs, beaten
2/3 cup shredded Monterey jack cheese
1 cup panko breadcrumbs
2 tablespoons Parmesan cheese
1/4 cup finely chopped fresh parsley
2 tablespoons finely minced jalapeno
1 teaspoon salt
1 teaspoon black pepper
Toby’s Ranch dressing
1- In a large pot of boiling water, add broccoli florets. Submerge in water, cover with a lid, and let cook for 2 minutes on high heat. While the broccoli cooks, add ice and cold water to a large bowl. Transfer the broccoli to the bowl of ice water to stop the cooking process. Drain as much water out of the broccoli as possible.
2- Transfer cooked broccoli to a large food processor and pulse on high until there are no more lumps and it looks similar to rice. Transfer 2 cups of grated broccoli to a mixing bowl. Drain as much water as possible, again.
3- Add beaten eggs, shredded Monterey jack cheese, panko breadcrumbs, Parmesan cheese, fresh parsley, jalapeño, salt and pepper. Mix well.
4- Measure out 1 tablespoon of broccoli mixture, and hand-form into a tot shape, packing it tightly with your hands. Repeat, and place on a baking sheet on top of parchment paper. (Makes 4-5 dozen broccoli tots)
5- Bake in a preheated 375 degree oven for 8 minutes. Carefully flip tots, and continue baking for 8 more minutes.
6- Remove from oven and transfer to a serving dish and let cool for 5 minutes. Serve with Toby’s Ranch dressing. GAME ON!
