Super Bowl game day is coming up. Time to bust out those party food favorites for a big group of family and friends. When I think of a good Super Bowl game day football watch party- good company, good food, and good drinks. It’s a great time to cheat on your diet, all in the name of footy footy football (The Waterboy reference for all of you Adam Sandler lovers!) I combined the concept of good food and good drinks into 1 Super Bowl recipe- all you need to add is the good company.

Tomato soup with grilled cheese is a classic American comfort dish. The Super Bowl is a classic American tradition. See the overlap here? I thought it would be fun to turn one of my favorite dishes into a portable, finger food perfect for a big crowd. Cut grilled cheeses into bite size pieces, and pour tomato soup into shot glasses, and you’re in for a legendary Game Day party.
I wanted to emphasize some things about this recipe:
Using fresh tomatoes
Use them! Leave the canned tomatoes in the pantry. Using fresh tomatoes will give you a sweet, natural tasting tomato soup. If you have any over-ripened tomatoes sitting in the fridge, those will work fantastically for this recipe.
Using Monterey jack cheese
I love cheese. Really, I don’t discriminate against my cheeses. I strongly recommend using Monterey jack, specifically, because from my experience- Monterey jack cheese melts the best and most evenly. Mozzarella, gruyere, and cheddar also work great!
Cooling the tomato soup to room temperature
It’s important to cool the tomato soup to room temperature so that your guests can take the shot without burning themselves. If you’re using glass shot glasses, it can be too hot to handle. If you’re using plastic, disposal shot glasses, it can melt the shot glasses.
The recipe makes about 3 – 3 1/2 cups of soup and 5 full grilled cheeses. Double, triple, or even quadruple for a bigger crowd!
