Who says burgers can’t be healthy-(ish)? These are pesto stuffed turkey burgers with avocado and fried egg served on toasted 100% whole wheat buns. Health nut friendly, cravings friendly, YOUR MOUTH friendly. Seriously, just make this recipe and see what happens. Add avocado and a fried egg when in doubt and it’s bound to be a hit. AM I RIIIGHT? Confession- how this recipe came about:
I’ll be honest, after a few unsuccessful attempts at making burgers on the stove. So, I needed to try something different since my burgers kept turning out too dry, or too raw on the inside. By stuffing the patties with butter, the patties become moist and delicious on the inside and help cook the outsides more evenly. This is a double whammy trick because it adds TONS of flavor. You can get wild with what you add to the butter- don’t limit yourself to just pesto! Cheese? Garlic? Fresh herbs? Throw it all in there!
BUTTER ME UP:
This is a super important butter stuffing trick to keep in mind- keep your butter softened throughout the whole process. Don’t worry about forming perfectly circular butter balls. When you stuff your patties with the butter and push down on the patties to form into “discs”, if your butter is soft it will evenly distribute within the patty. If you DON’T keep your butter soft, the butter will “cut” through your patty and the butter will just ooze out while cooking instead of staying inside where it’s meant to be!
What meat to use:
You can easily use leaner ground meats such as ground turkey or pork without comprising big flavor in your burger. You’re already adding a good amount of fat from the butter and pesto, so you can use leaner meats! If you want a more indulgent burger, use ground beef or lamb or a combination!
Last but not least, EGGS-the best topping:
I’m pretty sure you know how I feel about eggs, but let me remind you. Eggs make EVERYTHING better. I like to make my fried egg crispy on the outside and still runny on the inside. Polk the yolk and watch it ooze down your burger- I mean seriously, LOOK at this:

This recipe makes 4 juicy burgers! If you’re eating solo, you can stuff the patties and refrigerate them for up to 2 days. Tomorrow when you’re feeling hungry, cook up these patties and you have yourself a quick yummy burger in no time!
