This is NOT your typical fruit salad. This is a sweet and savory version of a fruit salad- with orange, grapefruit, kiwi, goat cheese, fresh basil, and balsamic glaze. I like to go to the farmer’s market as much as possible for fresh produce, and this is kind of an ode to that weekend morning tradition. The farm to table movement is huge in California, and I really love the emphasis on healthy, fresh food. It’s never too late to work on that summer body! 2017 is the year of fitness, let’s get it.
This is an extremely easy recipe to make, that I can barely even call it a recipe. Chop up some fruit and basil uniformly, sprinkle some cheese, and drizzle some sauce, and boom bang you are good to go!
I really like the combination of sweet, earthy, and tangy. Sweet from the orange, kiwi, and balsamic glaze, earthy from the fresh basil, and tangy from the crumbled goat cheese.
A note on the balsamic glaze:
You can make your own balsamic glaze in a saucepan by mixing balsamic vinegar with white or brown sugar over medium heat. Make sure to constantly stirring until the sugar dissolves completely. Then, boil the mixture and continue cooking on low heat until the sauce is reduced. Keep cooking until you reach the syrup-y consistency and let cool completely. You can take a quick shortcut and buy balsamic glaze already made in a bottle from the store to save some time. The glaze is packed with so much flavor so a little goes a long way! Plus, this refrigerates very well and lasts for months.
Not everyone likes the sweet and acidic flavor of the balsamic glaze. This salad can stand alone without it, like this:
