Yes. I went there. Mexican street corn (Mexican Elotes) are my new obsession. These are wildly flavorful and unreasonably easy to make.
Mexican street corn, in my opinion, is an amped up version of the American classic. It’s much tangier and doesn’t necessarily need to be grilled. I boiled my corn and got INCREDIBLE results. I would say the results were honestly life-changing!
Corn- I used sweet corn because that was the only fresh corn available. You can use any fresh corn you can get your hands on! Boiling corn is extremely easy. Fill a large pot with water. Close the lid and add salt. Turn the burner on high heat. When the water has come to a boil, drop the corn in the pot. Continue cooking on high heat until the water returns to a boil. When the water is boiling again, close the lid and turn off the heat. Let sit for 5-7 minutes, until the corn is fully cooked and tender. Tada!
Mexican crema- this has to be the world’s easiest recipe. Mix 3/4 cup of sour cream with 1/2 cup of mayonnaise. Try to use full fat sour cream and mayonnaise for the most flavor, and keep the ratio of sour cream to mayo at 3:2.
Toppings- crumbled queso fresco or cotija cheese, chopped cilantro, and Tajin seasoning. These toppings add a TON of flavor and hit every taste buds. The corn is sweet, the cheese is salty, the cilantro is earthy, and the Tajin seasoning is tangy. Not to mention the butter that is smothered on top for the richness element!
Queso fresco vs. cotija cheese– I love both cheeses with a passion. Queso fresco is milder than cotija, and cotija is saltier. For this recipe, I recommend using queso fresco because it can get a little too salty with the Tajin seasoning.
Tajin seasoning- It’s a wildly flavorful seasoning of dried chile peppers and lime. It’s commonly used on fruit, but this works perfectly on this Mexican corn!
Things can get a little messy
DISCLAIMER: this is not really something to eat on a first date. This is kind of messy, and there’s no shame in eating it with your hands! HOWEVER- if you’d like to keep it clean, you can get the corn off of the ear of corn, and mix in the toppings like a salad.
