Man oh man. Nothing like a freshly baked key lime pie, made 100% from scratch! There’s something really therapeutic about baking, especially if you’ve had a bad day.
It’s hard to pinpoint my favorite part about this dish- the crust, the filling, or the fresh, zesty whipped cream on top. I’ll let you be the judge of that! Let me break down all the elements of this key lime pie.
Good ol’ buttery goodness! Graham crackers are one of my favorite sweet ingredients to cook with. There’s something truly heartwarming and nostalgic about them. The crust is so easy to make and makes your entire house smell absolutely delicious. There’s a few ways of making the crust- the food processor method, the ziplock method, or the lazy method.
For the food processor method- place graham crackers in a food processor and blend until crumbs are formed. For the ziplock method- place in a large ziplock bag, press out as much of the air as possible, seal ziplock bag, and hit with a rolling pin or heavy object until crumbs form. Lastly, for the lazy method, buy graham cracker crumbs.
If you’re baking out of comfort and want to alleviate some stress, I highly recommend the ziplock bag method.
It’s all about the fresh key limes! Don’t you dare use bottled lime juice! I have to admit, juicing about 1 pound of key limes is a pretty tedious task. Key limes are much smaller than regular limes, so it’s a laborious process. Turn up some jams and get juicing!
The filling is very basic and only has 4 ingredients: fresh key lime juice, sweetened condensed milk, egg yolks, and heavy whipping cream.
The lime juice brightens up and balances the heaviness of the other ingredients- you won’t even feel like you’re eating a sugary dessert.
The whipped cream
Don’t ever buy canned whipped cream again from the store! That stuff tastes like chemical air to me. If you have a stand mixer, this is the most effortless recipe. Throw in some heavy whipping cream and let the mixer do the work for you! Mix in some sugar and fold in some fresh lime zest, and that’s it. The taste of freshly whipped cream is much lighter than the stuff you get at the store.

P.S. I brought some key lime pie for my coworkers and they unanimously agreed that the thick, buttery pie crust was their favorite part!
