So many of my favorite things all in one bowl- and it’s healthy too! This is a healthy Mexican chicken and brown rice salad bowl that’s a staple for anyone who likes big flavors. This has the Mexican essentials- protein, rice, beans, onions, tortilla chips, corn, tomatoes, avocados, cheese, cilantro, and lime. I’ve hit almost every color of the rainbow making this!

Make sure you season your chicken with tons of Tajin. You can find this seasoning in the Mexican section of your local grocery stores. Nothing really compares to it- it’s so tangy and flavorful and adds a really nice red hue to the chicken. You can substitute, add, or subtract any of these ingredients to customize your own salad bowl.
