Being from California, I’m blessed with the endless avocados around me all year round. It’s one of my favorite ingredients to put in salads, sandwiches, avocado toasts, and to eat just straight up with a spoon! Especially when I lived in Santa Barbara for school- seriously. Avocado this, avocado that. There was no restaurant in Santa Barbara that didn’t bust out avocado-centric dishes (is that a word?!)
I decided to combine one of my favorite combinations. I always wanted to learn how to DJ and mix different songs- but since I never did, I like to mash up different favorite dishes in the kitchen instead. I’m talking about the classic Caprese combination of cheese, tomatoes, and fresh basil, with grilled avocado. The grilled avocado stuffed with caprese salad was born with this experiment! I must say, it’s quite tasty!
I decided to share it with you because the results were exquisite! This is one of the fastest and easiest recipes you will find for a perfect little snack that’s packed with nutrition.
When making this, some of the salad spilled from the avocado. No worries there- just eat it right up! No apologies for eating a salad in a new and creative way!
