This recipe for chocolate Teddy Graham tartlets is like a time machine back to my childhood. Although I did not have an all-American upbringing, Teddy Grahams was definitely something near and dear to my heart growing up! I remember eating these in elementary school, how time flies. I adored the graham cracker flavor, and what’s not to love about the teddy bear shape? As an adult, I decided to dedicate an ode to Teddy Grahams by making some decadent mini chocolate teddy graham tartlets out of the chocolate Teddy Grahams!
A little of slice heaven is just 5 ingredients away (6 with the raspberries)! The raspberries add a nice pop of color and you can never go wrong with berries and chocolate! The filling has the texture of a mix between a chocolate mousse and chocolate ganache. It’s thicky, it’s creamy, it’s chocolate-y and delicious!
I must say, these taste the absolute best 48 hours out. I know that sounds insane, because these look so inviting to eat immediately- but trust me! The longer the tartlets sit in the fridge, the more the chocolate filling settles and develops an incredible texture. Chocolate ganache for days, literally.
