Nothing screams California louder than brunch, avocados, and poached eggs. These happen to be three of my favorite things! This is one of my favorite brunch dishes to make. I love making this because it is so simple and delicious, and just straight-up satisfying and indulgent. I’m not sure if this is even considered a cheat meal, but it is by no means “low-fat”. It is loaded with the healthy kinds of fats from the avocado, salmon lox, and fresh eggs. Pair this with some mimosas and you have yourself the ultimate weekend brunch! Squeeze fresh oranges to make fresh OJ, then mix equal parts orange juice with champagne and garnish with some orange slices. Easy peasy, orange squeezy!

The most important part of this is the eggs. Poaching eggs is a technique that takes time to perfect, but with a little courage, follow the steps in the recipe and conquer the poached egg challenge to make a killer brunch at home! Don’t ever pay $30-$50 for brunch anymore and make it home with friends- hint: you’ll get way more mimosas.
