Full disclosure: this recipe is extremely naughty. Bacon, brie, maple syrup, bread. This is an incredibly sinful, fun, and easy recipe you can make up to 3 days in advance before game day, party, or any time you’re looking for a downright comforting meal.
It felt a little barbaric making a weave out of bacon, I couldn’t stop myself from laughing out loud at myself. Luckily I had a video from Food & Wine that walked me through the steps of how to make the bacon weave- check it out and follow along here.
How this recipe came about:
I was having a cheese-themed dinner party with some friends. One of the things we made together was a baked brie. I remembered the video I saw (^link above) about the bacon weave, and just thought about what would happen if I wrapped a bacon weave around an entire wheel of cheese. So I did. No regrets!
In the video, he cuts the bacon in half, but for this recipe I kept the pieces long. Depending on the size of the Brie wheel you use, you might have to cut off some of the bacon to form a thin bacon weave layer around the Brie. Make sure to flip it over before transferring it to the baking sheet so that it stays wrapped as it’s baking.
This forms into this little bundle of happiness, all tightly wrapped and ready to be baked in the oven!
The indulgence of this recipe continues with the added sweetness from the maple syrup. It brings it all together and balances out the fattiness and saltiness of the bacon. The sweet and salty combo is always delicious!
I served this with baguette circles. I formed a ring of carbs around my bacon, melted cheese basically!
The only thing missing, was more maple syrup. Make sure to drizzle some more maple syrup on top of the baked bacon wrapped Brie as the final finishing touch of this naughty appetizer.
